I made some rolls the other day and some chicken salad to go with it- Yum! It’s a great meal for a hot day.
2 cups shredded or chopped cooked chicken
1/2 cup chopped celery
1/4 cup chopped green bell pepper
1/2 cup dried cranberries
1/2 cup sliced almonds
3-4 stalks green onion chopped
1/2 cup mayonnaise (or more depending on your preference)
1/2 tsp paprika
Mix everything together then chill for an hour or so. Add to sandwiches if you like and enjoy!
