Cheeseburger Soup Recipe

So, this recipe is not healthy, but it’s mighty tasty! It also doesn’t photograph well, but my husband loves it… like really loves it, which is saying something since it’s not a steak, rib, or chicken wing dish!

 

Cheeseburger Soup

1/2 lb ground beef (I used 1 lb)

3/4 cup chopped onions

3/4 cup shredded carrotts

3/4 cup chopped celery

1 tsp basil

1 tsp parsley flakes

4 TBSP butter divided

3 cups chicken broth

4 cups diced potatoes

1/4 cup flour

8 oz american cheese cubed (this would be the boxed velveeta type cheese- like I said, not healthy- and we usually use a bit more than 8 oz)

1 1/2 cups milk

3/4 tsp salt

1/4 tsp pepper

1/4 cup sour cream

 

1) Brown ground beef, drain, and set aside

2) Saute onions, carrots, celery, basil, parsley, and 1 TBSP butter about 10 min. over medium heat

3) Add potatoes, beef, and chicken broth. Bring to boil, reduce heat, cover, and simmer 10-12 min. until potatoes are tender. Meanwhile, melt 3 TBSP butter, add flour, cook and stir until bubbly then add to soup

4) Bring soup to boil, cook and stir 2 minutes, reduce heat to low and add cheese, milk, salt, and pepper. Cook and stir until cheese melts (I usually add the cheese, wait until it melts then add the milk)

5) Remove from heat and add sour cream.
